Why the ecommerce module doesn’t have an entitymodel.xml file?

Because it's a sort of  "Special Purpose" module wich lean on "real"
"applications" modules like Product, Party, Accouting, Order, etc.

Actually moving ecommerce to Special Purpose directory has already been
discussed...
