any clues, I have to set rules in order to activate or not the tax and

I need to give the owner the choice - he might desactivate it.

Ben,

Please refer the TaxAuthorityRateProduct and related entities for your
purpose, Manage the tax rate for date range.
OFBiz also provide services and UI to edit this data under catalog
component.

If you would like to go for individual product or group of products then
can check for Product.taxable flag and TaxAuthorityCategory entity data and
related code.

I want to know too how it is working.

could you give me more details about how and where exactly I can link
the TaxAuthorityRateProduct to my time entries. I seen it can be linked
on the invoiceItem, but I don't know how and where to do it.

Also you can refer the demo data in the TaxAuthorityRateProduct, and if you
have some technical knowledge (not necessarily related to OFBiz only java
will work) then you may also like to go thru service calcTax or method
TaxAuthorityServices.rateProductTaxCalc().

Finally what Yashawant suggested you can play by editing the tax rate and
check the reflections while creating orders.
