Perhaps this is a really simple but I cant seem to find an example on the demo ecommerce site of one product with more than one image?

Per my understanding, you have to customize product and ecommerce module to support multiple picture. This is not very difficult. Try this:
1. Enter the katalog screen 2. Create a katalog 3. Create a cathegory 4. In the catalog-manager, select the top cathegory at the lefthand side (the left bottom screenlet) using the mouse. You should see your cathegories in the catalog-screen 4. Select your cathegory by pressing it with the mouse You can now enter your product with all types of images that you can upload from your local computer. I have found that this is the simplest way to add products and images. Using xml is good, but I found that this is better. Initially anyway. Please note that this will give your kategory a image.

The demo only put in the small image.
how ever if you adding product images through the catalog you simply browse for the image and ofbiz ill upload it and put an image in each image size. https://localhost:8443/catalog/control/EditProductContent?productId=GC-001 and a trick i learned you can click on browse and put in a URL to an image and it will upload it the same way. Now if you want to use the demo data then you have to put the images in the perspective folders the enter the data for all the image size in the demo data. with functionality, but is lacking documentation. Enter the webtools-application, and select xml-loading. Better would be to enter the following area on your disk: ./specialpurpose/ecommerce/data/ and study these, and then you can choose if you would like to change one of those and use run-install, or if you would like to use the webtool. This feature exists OOTB after trunk revision: 782537. Please take svn update on your local machine and try URL: http://localhost:8080/ecommerce/products/PROMOTIONS/p_GZ-2644 We have also prepared the sample data file so after taking update you may need to run ant run-install It will take around 24 hours to reflect the changes on Demo server so I am sure if you will test it on that then it will not work.
