I agree with you for the fact that I must use reserve inventory = true but as I didn't find how to change the default reservation I tried to change this setting.
Now I'll explain you why in some cases I need to change the default reservation. As the items are serialized, it's possible that a reserved item has been damaged, lost,... or is unreachable in the facility for example. So we must be able to change it... but I didn't find how.
Another problem I've found with the "reserve inventory = true" setting is : when there's no item in the inventory, it automatically creates a row in InventoryItem - not serialized - corresponding to the quantity sold.

reserve inventory = false is mostly used for the POS where you don't need to have an inventory check since you can't sell face to
face something you don't have.
So I don't think it's the right way to do what you want and I suspect you will have to write your own code for that...
Of course you may contribute it back creating a Jira an attaching a patch. But before maybe you could discuss it here
