The following line displays the currency with the symbol.
<@ofbizCurrency amount=price.price isoCode=price.currencyUsed/> 

Can anyone tell me where from these variables come from?

It is invoking an FTL macro named ofbizCurrency with two arguments, amount and isoCode.
