Hi Jacques,
We can definitely come up with a solution and yours has most of it (you need to add pluginLibsRuntime as well).
However, I have a question, why do you want the Jars in the first place? Why do you want them isolated? What is the purpose?

Notably Eclipse jars if you use the Gradle Eclipse task and more if you use Gradle for other reasons than OFBiz.
