Thanx Guys, After I typed up the last reply (of course it didn't hit me till
then) I found the the
DemoShipping.xml file :)

And I will take a look at the Setup Guide.

Good point Jacopo, that may be the problem.

Fred: there is a fairly decent coverage of the store setup and such  
in the Basic Production Setup Guide, so that might be helpful to you.
